The Sustainability Nature Gifted Us

Centuries ago, Cappadocia's volcanic tuff rocks offered natural climate control to the people who lived within them. We have inherited this legacy: our cave rooms maintain a constant temperature of 18–20°C throughout the year, significantly reducing the energy required for heating and cooling compared to conventional buildings.

For all restoration work we use only stone, clay and traditional mortar sourced from the region itself. This approach preserves both the architectural authenticity and the building's thermal balance with its surroundings, while keeping transport-related carbon emissions close to zero.

The result: The same level of comfort, far lower energy consumption — this is the form of sustainability that architecture has gifted us.

Farm to Table

More than 80% of the fresh vegetables, fruit and herbs for our restaurant are sourced from local farms in and around Nevşehir. Our seasonal menu philosophy keeps long-distance transport close to zero. Cappadocia's own wines, grape molasses and dried fruits are permanent fixtures on our tables.

Zero Plastics Policy

Single-use plastics have been completely eliminated from in-room amenities. We use refillable glass bottles, bamboo toothbrushes and biodegradable packaging. This prevents dozens of kilograms of plastic waste every year. We reached this goal in 2023 and continue to maintain it.

Water Conservation

We continuously monitor and reduce our annual water consumption through low-flow fixtures, dual-flush toilet systems and a towel reuse programme. Our grey-water treatment system means drinking water is never used for garden irrigation. Our goal: reduce per-guest water consumption by 25% by 2026.

Local Employment & Training

92% of our team members come from Uçhisar, Göreme and surrounding settlements. We run year-round internship and leadership development programmes for local young people. We prioritise women's employment and disadvantaged groups, providing empowerment grants.

Renewable Energy

Rooftop solar panels supply a significant share of common-area lighting and hot-water needs from solar power. Our smart energy management system delivers automatic energy savings in unoccupied areas. Our goal is to reach a 70% renewable energy share by 2027.

Zero Waste Goal

We conduct regular waste audits through kitchen-waste composting, glass–paper–metal separation and the use of biodegradable detergents. We report the amount of waste sent to landfill every year, embracing a transparent accountability approach.
